Bursa’nın herhangi bir yerinde sık sık karşınıza çıkan seyyar tatlıcılar vardır. Bu seyyar arabaların bazılarının ön taraflarında küçük bir tabelada “Bursa’nın Meşhur Bağdat Hurma Tatlısı” yazısı çeker dikkatinizi. Daha önce hiç yemediyseniz karşınıza çıkan üstü hindistanceviziyle süslü, şekli hurmaya benzeyen bu ilginç tatlıdan en azından bir tane deneme isteği duyarsınız içinizde. Bir tane denersiniz denemesine ama bir taneyle yetinmek ve devamını getirmemek pek mümkün olmaz. Yedikçe yiyesiniz, eve giderken de birkaç kilo götüresiniz gelir. En iyisi, en lezzetlisi ile ancak Bursa’da buluşabileceğiniz tatlardan biridir bu tatlı. Adı tadı efsane olan, kokusuyla, lezzetiyle içinizi bayıltmadan ağzınızı tatlandıran Bağdat Hurma Tatlısı’nın size anlatacakları da var. Gözükara, yıllarca tadını damağında saklayan, her şeye rağmen kendisinden vazgeçmeyen mucidi ve size ulaşana kadar yaşadığı maceralar gibi…

Bir çorbanın, yemeğin, tatlının en iyisi, en güzeli, en lezzetlisi neredeyse üşenmeden gidip onu bulan, zeki, yenilikçi, herkes tarafından sevilip sayılan bir ustası var Bağdat Hurma Tatlısı’nın… Eğer bu mucit usta, bir gün çorba içmek için gittiği İstanbul’un Bağdat Caddesi’nden ilham alıp Bursa’da bir pastane açmaya karar vermeseydi, çocukken bir seyyar tatlıcıda yiyip doyamadığı o tatlının tarifi peşine düşmeseydi, tüm ısrarına rağmen kendisine tarifi vermeyen satıcı ölüp gittikten yıllar sonra aylarca, sabahlara kadar damağında kalan o tadı bulabilmek için uğraşmasaydı, Bursa mutfağı bu enfes tatlıyı asla kazanamayacaktı.

Bugün torunlarının sahip çıktığı bu gizemli tarif, ilk kez 1968’de Güngör Sevinç’in çabalarıyla ortaya çıktı. Tatlının mucidi Güngör Dede aslında daha küçük bir çocukken seyyar bir tatlıcıdan alıp yediği, hem görünüşü hem de lezzetini yıllar boyu aklında, anılarında, tadını damağında sakladığı o tatlının peşindeydi. Yıllar geçip ani bir kararla Bursa’da açtığı pastanesi için bir yandan Bursa’ya mal edeceği farklı bir lezzet, özel bir tarif ararken diğer yandan ortaya çıkması için uğraştığı tat aslında o çocukluk yıllarında yediği tatlının lezzetiydi. Daha o zamanlar o seyyar tatlı satan amcaya, tatlının tarifini kendisine vermesi için yalvarmıştı ama amca ikna edilemeden hayata gözlerini yummuştu. Durum böyle olunca iş başa düşmüş, Güngör Dede damağında sakladığı bu tadın tarifini tek başına bulmak zorunda kalmıştı. Pastanesindeki günlük işlerden arta kalan tüm zamanını bu işe adamış ve aynı tadı yakalamak için gece-gündüz, bıkmadan, usanmadan, haftalarca, aylarca sabahlara kadar çalışmıştı. Onlarca, yüzlerce deneme yanılma çalışmalarının sonucunda birçok farklı tada ulaşmıştı ama aradığı bunlar değildi. Bu denemelerin yanılmalı sonuçları ise bir arkadaşının aracılığı ile Büyükadalı atlara kısmet oluyordu. Nihayet 1971 yılında bir gün o tada ulaşmayı başarmıştı. Tatlının adına ise tarifine, tadına ulaşmadan çok önce karar vermişti Güngör Usta. Bursa’da doğup Türkiye’ye yayılan kısa süre içinde de tüm dünyaya ulaşmayı başaran, yerli-yabancı şeflerin tarifi peşinde koştuğu bu tatlının adı “Bağdat Hurma Tatlısı” olacaktı.

Bursa’dan tüm dünyaya…
Önceleri bir yerel lezzet olarak kabul edilen, Bursalıların çok sevdiği, kentin dört bir yanından üşenmeden gelip aldıkları bu tatlı kısa zaman içinde Türkiye’nin ve hatta dünyanın dört bir yanında talep görmeye başladı. Asya ve Avrupa ülkeleri, Dubai, Almanya, İngiltere, Fransa ve hatta Bağdat bile bu tatlının müdavimi oldu. İş bu kadar büyüdü, Bursa’nın Bağdat Hurma Tatlısı dünyaya açıldı ama seyyar araba satışlarının gelenekselliği bugün bile hala özenle korunuyor. Belli standartlara bağlı kalarak, kontrollü bir şekilde yaşatılan bu gelenek ilk gününden bu yana hiç bozulmadan ve aksatılmadan yaşatılıyor.

Tarifi Güngör Usta’dan bu yana sır gibi saklanan tatlı iyice dinlendirildikten sonra usta ellerde yoğurulmaya başlanıyor. Özel makinelerde her biri birbirine eşit olacak şekilde kesiliyor, özel şerbetiyle tadına tat katılıyor ve son olarak da olmazsa olmazı hindistancevizi ile buluşturuluyor. Bir tepsi Bağdat Hurma Tatlısı etrafında toplanan dostlar, aileler bir yandan bu enfes tatlının tadına varırken bir yandan yıllardır çözülemeyen sırlı tarif hakkında tahmin yürütmeye çalışsalar da bir süre sonra tatlının verdiği mutluluk merakın önüne geçiyor.

Bağdat Hurma Tatlısı da Kestane Şekeri, Tahinli Pide, Bursa Kebabı, Mustafakemalpaşa Tatlısı gibi sınırları doğduğu kentin, ülkenin sınırlarını aşmış Bursa lezzetlerinden. Bu lezzetlerin, tariflerin var oldukları, keşfedildikleri ilk yılların hatıraları; bugünün dedelerinin, ninelerinin torunlarına anlattıkları çocukluk anılarında saklı…

It is an adventure of taste dating back to the end of the 60’s… Even though the name leads us to think differently, it is a taste of Bursa and has no dates in it. The fame of the Baghdad Date Dessert has exceeded the borders of the city and even the country with its secret recipe… It is a source of energy for the locals of Bursa for over half a century…

 You may come across many dessert peddlers all around Bursa. Some of these small carts have a placard up at the front that says: “Famous Baghdad Dates Dessert of Bursa”. You feel the urge to try at least one of this interesting dessert that resembles the shape of a date covered with coconut. You try one but it is never quite possible to just quench your desire with one and not continue eating. You want to eat more and more and even take some with you home. It is a dessert the best and tastiest of which you can find in Bursa. The Baghdad Date Dessert that has become a legend with its name, taste and scent has things to tell you. Like its courageous inventor who carried its taste in his palate for years as well as the adventures it underwent until it reached you today…

Baghdad Date Dessert has an inventor who is loved by all and who never tires of going around to wherever a soup, a dish or a dessert is the tastiest… If this inventor cook had not gone to the Baghdad Street in Istanbul and had not decided to open up a store in Bursa to seek that taste he had once tasted as a child and had not strived to find that taste for months, working for days on end until morning, Bursa cuisine would never have such a delicious taste.

The taste hidden in the palate

This mysterious recipe that is now well hidden by the grandchildren first came up in 1968 with the efforts of Güngör Sevinç. Inventor of the dessert, Granddad Güngör, was after the taste of a dessert he had bought and eaten from a peddler as a kid the taste and appearance of which he kept hidden in his mind and palate for years. When years after he suddenly decided to start a bakery in Bursa, it was this taste of his childhood years that he managed to find while also seeking special recipes unique to Bursa. He had begged at that time to the peddler of the dessert to give him the recipe, but the seller had passed away before he could be convinced to do so. So, it was up to him to find the recipe and Güngör Granddad had to go after this recipe he had saved in his palate for years. He devoted all his time outside of the daily chores of his bakery to find the recipe and had strived to find the same taste for days and nights, weeks and even months. He had come across many different tastes after dozens, hundreds of trials, but these were not what he sought for. The results of these trials were sent over to the horses of Büyükada by one of his friends. Finally, in 1971, he managed to find that taste. Güngör Usta had decided on the name of the dessert long before he found the taste. The name of this taste that quickly spread like wild fire from Bursa to all over Turkey which is sought after by both local and international chefs would be “Baghdad Date Dessert”.

 

From Bursa to all over the world…

This dessert that was at first accepted as a local taste soon started acquiring interest from all four corners of the country and even all over the world. Countries from Asia and Europe, Dubai, Germany, England, France and even Baghdad became hooked on this dessert. It became so popular that the Baghdad Date Dessert is now sold all over the world but the tradition of peddling is still preserved meticulously. This tradition has been ongoing in a controlled manner since the very first day subject to various standards.

The dessert with a well-hidden recipe since the time of Güngör Usta is started to be prepared by expert hands after being left to wait for some time. It is cut in equal portions in special machines, its unique sherbet is poured over and finally it meets the coconut sprinkled on top. Friends and family come together around a tray of Baghdad Date Dessert and try to find the secrets of the recipe but soon give up as the joy brought over by the dessert far exceeds their curiosity.

Baghdad Date Dessert is among the tastes of Bursa much like Chestnut Candy, Tahini Roll, Bursa Kabab, Mustafakemalpaşa Dessert the fames of which have far exceeded the borders of their hometown and country. The memories of the years when these tastes and recipes were first discovered are still hidden in the childhood memories of today’s granddads and grandmoms…
